Steamed Cod With Ginger And Spring Onions

This is a really simple dish that only takes a few minutes to prepare and 10 minutes to cook. The steamed cod just melts in the mouth while the ginger and spring onions give it a welcome bite. A simple soy and seseame sauce finishes it off nicely. This recipe serves two people and you'll need a bamboo steamer to cook it in.

You'll need the following ingredients...

  • 2 Cod Loins (or skinned boneless fillets)
  • 1 Bunch of Spring Onions
  • 1 Small Piece of Ginger
  • 1 tbsp Seseame Oil
  • 2 tbsp Dark Soy Sauce

Follow the instructions below...

  1. Put some water in a large pan and boil.
  2. Peel and cut the ginger into small batons.
  3. Cut the spring onions into 2 inch diagonals.
  4. Cut the cod into bitesize chunks.
  5. Arrange in the cod in the steamer and place the ginger and spring onions on top and seal tightly with the lid.
  6. Place the steamer over the boiling water, and turn it down to simmer for 10 minutes.
  7. Just before the 10 minutes is up, mix the soy sauce and seseame oil together and heat.
  8. Serve the cod on a plate and pour the soy and seseame sauce over it.
  9. Enjoy!

I serve this with plain basmati rice and nice cold glass of white wine. It's definately a dish to impress someone special with.
